Citrus Fruits

Of the family of the Rutaceae, of the genus Citrus, the citrus fruits are called hesperidios, which consist of flavedo or exocarp, which is the outer part of the fruit, with a multitude of vesicles with essential oils, mesocarp or albedo, it is whitish colored and padded and the endocarp, where is the fleshy part of the fruit, which is composed of swollen carpels, trichomes that are filled with juice, the seeds are on the inside.
The fruits can curdle without the need for pollination by parthenocarpy, cross-pollination gives rise to an increase in the number of flowers per tree that turn, but it has its downside the emergence of seeds. Citrus fruits are very sensitive to cold, don't resist well the frost, the plant can be dried if it is at temperatures below -4 ºC, do not need accumulate hours of cold to induce flowering.
Require rainfall in Toro to the 1,200 mm per annum and the light is essential for the processes of flowering and fruiting. To determine the optimum time to harvest is used the index of maturity; the collection is carried out when the ratio of soluble solids/acidity is 8 or more and the yellow-orange color at least 25% of the surface of the fruit, or a relation of soluble solids/acidity of 10 or more and the yellow-green color in at least 25% of the surface of the fruit.
The presence of carotenoids that give a yellowish-orange citrus is given from which the fruit, but the green color of chlorophyll masks to the carotenoids, which are becoming visible as the fruit ripens (process of assessment). Within the citrus we emphasize the production of clementines, a hybrid between mandarin and bitter orange, and orange.
